Have excess arugula? Don’t fear. Try out SilverPen’s quinoa and arugula recipe (image included in this post).

In my variation I used: arugula, tri-color quinoa, yellow onion, cherry tomatoes, French feta cheese, lemon juice, toasted almonds, capers, fresh parsley, and olive oil, salt and pepper (no artichokes in mine). 

The absolute BEST part of this concoction is the sweet onion oil infusion which is then mixed into the quinoa. Read again…the absolute best part is the onion olive oil infusion. It gives the quinoa such an amazing sweet taste which I never thought to try. I had to be careful not to overpower it with the lemon juice. Next time I am going heavier on the onions! Yum.
