Super grain: Teff
Teff is the smallest grain in the world. Each grain has the bran and germ in tact so it is super nutritious.
This weekend I felt inspired to experiment with a new grain and went for a porridge recipe variation on the back of the Bob’s Red Mill teff container. My variation contains teff, honey, butter, raisins and is topped with sunflower and pumpkin seeds.
So my verdict? Teff is very nutty and has a delicious delicate flavor of its own. The recipe called for a sprinkle of clove which I regretted adding. I’m not used to clove flavor and it screams over the teff flavor. I loved the tiny beads of teff, but couldn’t ignore the clove which ruined it. Next time I will leave it out.
