Heritage Pork Loin Roast

This roast was trussed to keep it together and seasoned with salt and pepper to allow the wonderful heritage pork flavor to shine.

The roast came out stiff rather than tender when cooked to 145°. I would cook it to a bit of a lower temperature in the future.

This pork is from a local farm that pasture raises its meat and lets the animals forage on grass and whatever else is around.
