It’s a mess capellini

One of my favorite dishes is a simple one that lets the ingredients shine. This is a bunch of vegetables that are sauteed and browned in olive oil, mixed with pasta, toasted pine nuts and fresh herbs. I love having eggplant that’s been sauteed ’til it’s on the verge of being burned and is so creamy and falling apart. The red pepper was sauteed until it had black marks on it. I sauteed the Vidalia onions on low heat until they were light brown, ultra sweet and translucent. So delicious!.. And easy.
