Brazilian Salmon Stew (Moqueca)

I wasn’t in the mood for heavy meat this week and decided I’d pick up salmon. After searching for salmon recipes, I somehow stumbled upon this recipe (from Simply Recipes blog) for a Brazilian fish stew made from white fish and also a link to a version with salmon. I marinated the salmon for a little less than a day, about 20 or so hours and used reduced fat coconut milk.

The end result was delicious and I loved enjoying it with capellini pasta. I wouldn’t hesitate to eat it with quinoa or rice another time.

The soup was so easy to make. Layer of diced bell pepper, tomato and white onion along with fresh cilantro burying marinaded salmon.

Now with the low-fat coconut milk added.

Cook the soup for 30-40 minutes.
